A friend once played me some of the earliest classical recordings, before the musicians had all grown up hearing earlier recordings. There was a lot more originality, a lot more variation, in the performances fifty years ago. When I listen to performances of Beethoven's violin concerto, I find I'm usually listening to a musician playing Heifetz rather than Beethoven because everybody today, both performers and listeners, has heard FSC-24 or LSC-1992, the Heifetz performance on RCA Living Stereo. And it is a refreshing change to hear somebody like Kennedy play it differently.

In the same way, the ethnic food I tasted in Australia was made by recent immigrants and was almost certainly authentic. But is was pleasant to taste ethnic food that did not taste like the ethnic food we are used to in the United States and Europe.
